Lemon Meringue Cupcakes

I have been waiting for an opportunity to make lemon meringue cupcakes. I used to make lemon meringue pie for hubby in the past. I haven't done it for a while, as life goes busy.

These cuppies were a donation for the community as a part of C3 church program.

The cupcakes are vanilla with lemon curd center, topped with meringue. Tastes so light, lemony & melts in your mouth.
